Christmas Ham is one of the best leftovers to have in your fridge. It’s so versatile and when you don’t feel like cooking, it’s there waiting to be sliced for a quick meal or snack. Easy!

Here’s 5 of our favourite super easy recipes for your leftover Christmas Ham:

  1. Fried Rice
    Fried Rice is always delicious as a side dish or on its own. Boil a large pot of water and add 2 cups of white rice. Cook for 12 minutes, drain and let the rice cool. In a fry pan add a teaspoon of oil, whisk 2 eggs and pour in the hot frypan (it will look like an omelette), add small cubes of red capsicum, eshallots and cubes of Christmas Ham. Toss and stir with the fried egg. Add the rice and keep tossing and stirring for 2 minutes. Add soy sauce to taste.
  2. Zucchini and Ham Slice
    Great for breakfast, lunch or as a side dish with a barbeque.
    In a bowl, combine 3 grated zucchinis, 1 cup of grated tasty cheese, 5 whisked eggs, 1 cup of sifted self-raising flour and 2 generous handfuls of cubed Christmas Ham. Line a square casserole dish with baking paper (to stop the slice from sticking), add the mix and bake for 40 minutes. Yum! You can even put these in a muffin tin or tasty savoury muffins.
  3. Ham and Cheese Croissants
    A treat for a weekend breakfast, lunch or a delicious snack. Warm them up for crispy, flaky croissants, tasty Christmas Ham and gooey, melted cheese.
  4. Ham Salad
    Create your favourite salad using baby spinach or specialty lettuce, cherry tomato, Lebanese cucumber, fetta cheese, toasted pine nuts and slices of Christmas Ham. Top with your favourite vinaigrette dressing or mustard and you’ve got a tasty side dish or lunch.
  5. Ham, Cheese and Pineapple Pizza
    For a quick holiday lunch at home, pizza is always a winner. On a pre-made pizza base or flat bread add your favourite tomato-based pasta sauce, sprinkle with grated cheese, add chopped red capsicum, sliced pineapple (in natural juice) and sprinkle with cubes of Christmas Ham. Add a handful of extra grated tasty cheese on top and bake in oven for 10 minutes. A light, healthy homemade pizza!
